Saturday - watching and waiting

I have been up awhile.. layin in the bed with difference scenarios running thru my head. I'm already mush brain.

Gas is already scarce in our town. That's scary.

We are watching things very closely. Have a game plan... just have to finalize things and load the truck.

Ugh.. I really do not want to do this again.

uh, ehh,, yeah.. something like that

My brain is frozen - or fried!

So far I have:

Purchased extra food, toiletries and water for people and pets.

Filled up the truck. *GASP*

Got my filing box and have my important papers in there.

Packed my jewelry, some photos, etc.

Did laundry.

Watched the tv channel.

Passed information on to family/friends.

Secured plans for leaving.

I'm about to go clean out my truck. We have a tahoe now, so not room like in a suburban. We are watching the storm and depending on where it makes landfall that will tell us to go or stay. In the meantime, you have to be prepared to do both.

The lines at the gas station are incredible. The stores are packed. I am so thanksful that I keep a good supply of groceries/water/personal items in abundance that those things will not cost up extra and I can rest easy.

The boards are cut for the windows and labeled. Extra gas has been purchased for if we come back and need it. The generator works. The water well works. We should be set. I'm taking my computer to the office Sunday or Monday for protection. The icechests are filled with ice to cool them down and we'll top them off if need be before leaving. I will take my freezer stuff - cannot let homemade sausage go to waste, people! I lost shrimp last time.. not gonna happen again if I have to cook them in a hotel room in an electric skillet! hahaha

It's time to bring one to be with a friend, one is at work and the other is gone out. Soo.. maybe Rich and I will get some quality time before things get rolling.

If it comes our way and we leave, we plan on putting our extra vehicles, tractors, 4-wheelers, etc., on our land north of here so they will be okay.

If we are a direct hit or wiped out like 3 yrs ago... my ass is going on vacation and not sitting around glued to the TV HAHAHAHA!~

Take care yall! time to get some more stuff done - who knew it would take this long. My advice is have a list.. if you don't.. make one this time and keep it! It really comes in handy when you cannot think and are panicing!!

I have a list a mile long... Thank goodness I'm off on Friday! Each night we are doing a little something to get prepared. We took pictures of everything today. I do not want to go thru this again!

I need meds. Wait, liqor is faster! Where is the wine when you need it????

From what I'm finding on the web, this is a strong CAT 2 already... by Sunday it should be a CAT 3.

Someone reserve my room in the nut house.. I don't think I can go through this again without going coo-coo. Seriously.

Menu Monday on Tuesday

Last night I hosted Bonko.. so the internet was off for a few hours. Everyone had a great time. It's so much fun to get together with the girls.

I recently tried Crockpot Mac n Cheese. Blah! Mushy noodles. It's worth it to cook it in the oven for a short 30 minutes and come out with scrumptious mac n cheese. The site is really good for ideas for the crockpot though.

Here is my menu for this week. All days are subject to swapping :)

Monday - Bonko - nachos with all the trimmings/peach cobbler. I'm sure the rest will be eaten after school today.

Tuesday - Pork Steaks, rice, gravy, veggie. (Sarah has been waiting for this for 2 weeks)

Wednesday - Hot pepper Garlic Chicken, rice/noodles, veggies.

Thursday - Leftovers!

Friday - Everyone is running in different directions - grab what you can.

Saturday/Sunday - out to eat; morph the leftovers; eat the leftovers. Clean the fridge!

bonko night

Today is looking good. Church, grocery shopping, and some more cleaning. I just have a few things to put up and dust really. Bathrooms will be cleaned tomorrow, so I"m good to go.

I've been playing bonko fo 16 yrs. Wow. It's a dice game. There are 8 of us. Bonko varies so much from group to group.. so I won't get into the details of how we play. But it is a lot of fun and everyone has a good time. The "host" makes the main meal and everyone brings preassigned things. The preassigned list rotates so you don't always bring the same thing - chips, dips, drinks, veggies and desserts. So we will always have those and then the main meat dish.

Rich loves to cook, so he usually cooks for me. I think he'll be off on the other side of the state again, so that means the cooking falls on me. Yikes! The bonko girls love when he cooks. So as to not disappoint them, he's cooking today so it will do it today and then all I have to do is heat is up. Awww.. he's so sweet! I'm fixing nachos. Pretty basic, quick and easy. But considering it's soo darn HOT outside.. nachos sound really good. Besides.. when you have all the yummy "trimmings" to go with it.. it really makes it delish!

Saturday doings

I'm off today so I'm trying to play catchup on the housework. So far I've picked up and put up, cleaned the fridge and the freezer, done a dozen or so dishes, loaded the dishwasher and checked email. Hey, cleaning is hard work!

I have Bonko Monday night and I'm still at a loss as what to cook. blah! I want something easy as I have to work. Usually Richard helps me, but I think he will be out of town, again. Double blah!

My files are all set up now in the filing cabinet and cleaning today was much easier because of it. I had a stack of papers I just didn't know what to do with and tada - they are now filed. Richard had to leave this morning around 5 to go out of town for work and he didn't have to wake me to find out where the papers were that he needed. He was tickled. And he knows where to find/put the papers in the future. Yeah!

I'm wanting/needing to make some more yogurt. That stuff is so good. I really need to freeze the "starter" that I have so that in the future I can just pull it out and make it as I need it.

It's time to make my menu for the week. Richard stopped at our favorite grocery store on his way home. We don't have them here - HEB. Gotta love a man who loves saving money too. Lots and lots for so little $. He's on his way home and says he's cooking ribs tonight. YUMMY. Gotta love a man who can cook too.

It's time to tackle the paper monster growing on the bar. yes, there is a bar under there.. somewhere.

Updates abound

I read on Heather's blog she lives for comments. Comments stress me out! Ya see.. I never know if I should reply back in email, on the blog, or not at all. I don't want to be rude, I just don't know what the protocol is for comments. argh! But, I do love them. I am only human and it's nice to know people are reading and enjoy what they read.

That said, I need to do some updates:

Went to the doctor, all is fine. Due to the massive migraine headache, individual pizzas will be served tonight. I know yall are just dying to know what we eat down south HAHAHA

Kombucha - Yes, very successful brewing. I only have one problem. I prefer to drink it out of the container instead of bottling it. It looses ... something.. after I bottle it and I don't know how to keep it fizzy. If I dip from the brew each day it just tastes better to me. So, I may make smaller containers and just brew more often. Will see.

Menus - I use to have a palm pilot. It stored our favorite meals in catagories - meat (chicken, beef, pork), casseroles, quick fix/crockpot, veggies/sides, breads, desserts. I listed all the foods we ate and loved. I could just look off that list and pick from there depending on what our schedules were. I really need to sit down and do that again since I've added several new meals thanks to Nicole! :)

Planning a menu helps me so much. Less time shopping (saving $- I know Heather will love to hear that!). All ingredients are on hand for every meal so no running back to the store, thus saving gas/time. I think about the week once and then it's done. No more staring into the freezing and cabinets to see what I have on hand to make a meal. I can look at my menu in the morning and defrost meat or meal prep as my day allows.

I do keep on hand the basic corny dogs, hot dogs, frozen pizza, frozen burritoes, etc. for those days when life throws a wrench in my plans.

Yogurt making - It's really easy, fun and satisfying. At first my yogurt was creamy and now it seems to have lil balls of grit/clumps. Any idea what that could be? It is good though and I see the whey separating from it like it is supposed to - not the slimey mess I ended up with before. GROSS!

Saved sinner - can you post the crockpot method you use for yogurt? Thanks! Here is the chicken and dumplings recipe I used.

Hump Day, Dumplings

Mid week. Gotta love it!

The chicken and dumplins went over well. I must have overworked my dough. Some of the dumplins were compacted balls of very firm dough. Some did get light and fluffy. I also added a can of carrots to give it some color. All in all, it was a great recipe and I"m sure one we will be having again. Who knew you could stretch 3 chicken breasts to feed a family of 5 with substantual leftovers by making chicken and dumplins? I am constantly on the lookout for frugal recipes as the cost of groceries rises right along with the gas. I dunno how people do it without coupons and planning ahead.

Time to get the kiddos moving. I think the novelty of school starting has worn off hahaha

What's cooking?

The other day I used a crockpot method of making homemade yogurt. YUCK!

Today I'm trying the recipe on HillBilly Housewifes site. Everything I have tried on her site has turned out wonderfully. No complaints. I dunno why I didn't turn to her first for yogurt.

Anyhoo, my yogurt is in the oven and I just peeked and it seems to be coming along nicely!! I cannot wait to try some. I have about 3 hours or "curing" left and then to let it chill down on the icebox. Maybe for breakfast tomorrow?

** The yogurt is done and it's great!! I added some frozen blueberries to it and MMMM. It's now cooling on the counter and soon to go in the icebox for tomorrow morning. I'm soo gonna need to triple this recipe. And I need to get some small glass jars. Baby food jars would be great. Hmm....

It's nice and thick and not at all tart like the store kind. No sugar either. I gotta get my hands on some more powdered milk.

I spoke to a few friends today and they all asked the same question. How come you just don't buy it? Good question. I guess it's the same reason I grow a garden, cook from scratch and raise chickens for eggs - because it tastes so much better AND it's very fulfilling to make something from your own hands and cuts the cost. Did you even know you could make yogurt yourself? There is nothing wrong with learning new things. Try it!

Menu Monday

I must get more organized. Well.. I need to STAY more organized. Things run so much smoother with a little organization. I just don't know why I cannot stick with it all at the same time. Couponing I jumped right into. Calendar keeping, the same thing. Menus... I just cannot seem to keep them going. I even tried repeating previous lists already made and that didn't work!

I'm giving it another go:

Monday - pepper steak/rice and pot stickers.

Tuesday - Chicken - in a red gravy or baked - family decides - veggies.

Wednesday - pork steaks in gravy with rice and veggie - Sarah's request.

Thursday - Chef boy R dee pizza - loaded :)

Friday - leftovers from the week!

Friday - let the games begin!

I put Sarah in a school out of our zone. I worried if she would hate me for it. Obviously, I was mistaken!

Oh.. I didn't cry, but oh how my heart leapt when she climbed out the truck. I tried to stay strong with reassurance.. and I guess it wasn't as bad as she thought it was gonna be cause she cannot wait to go back Monday LOL

She knew lots of people and found her way around. She said it's really nice - everyone is nice - kids and teachers alike. They WANT to help. I think I made the right choice. See, even moms are not immune to peer pressure.

This weekend has been really nice even though I have had to work. Today, Rich and I are going to wet a hook sans the kids. They have too much to do in preperation for school tomorrow.

I'll be having a busy week. It's gonna fly by!

Starting another chapter

School starts Friday, people! Oh, how I love getting the kids ready for school. I hate the shopping part, but I love once it is all done.

I love to spread out the supplies on the floor. The touch, the smells. MMMM I really love bringing the kids to school. That electricity in the air. Everything is so crisp and fresh. Uniforms are pressed and new. Backpacks are bright and stiff and loaded down with supplies. The kids are shocked to be up so early and walking around in a daze! Everyone is so nice and quiet and excited.

My oldest is in college. She leaves the house like any other day.

My middle is in high school. He'll catch the bus and bring home a list the first day. Then me and a zillion other mothers will be racing to the store to pick through the supplies that are left over.

My youngest is in her last year of middle school. I'm enjoying this year as much as I possibly can. The supplies are purchased. The uniforms are hung. The backpack is bulging with supplies. The shoes are bright white.

I'll drive her to school that first day. I'll watch her get out of the truck and with a quick, "See ya later!" she'll be gone. Her friends are waiting to share in the excitement of that first day. It brings tears to my eyes as I type this out. My baby won't be my baby for much longer.

We use to gather, us moms, that first day of school and have breakfast to celebrate our houses staying clean and no more fights. No more dirty dishes and kids staying up all night! This year is gonna be very different for me.

I was off Friday so I drug kids around shopping. Finished up school shopping!

Saturday, I tried to rest up. Alas, I was forced to enter the dreaded.. walmart. Blech! I do not like that store. But, they had what I needed and I was in and out in a flash.

Then it was off to my sisters for a Bday party. It was nice to all sit around and visit. It was hot.. but not too bad. I really enjoyed that. Drop D off at work and Sarah and I hit the mall again. She left with 2 things. That's IT!

This morning it was church and lunch with the kids while Rich did some bushhogging. Then it was home for nap. MMM. Now i'm waiting on the sun to go down and the fun to begin!

Tomorrow is work.. I soo need a vacation!!

Ugh, the wind is howling. The chairs on the front porch have been blown around and my metal bucket blew off. HOpefully it's not far and not beat up. I don't mind the rain.. it's the wind I can do without. Seriously.

Gotta love texting. My man is about to be back on land and then will be on his way home :) The worrier that I am, I can only imagine how the past few days would have gone had we not been able to at least talk!

I did get an email from his Uncle saying he brings Rich on a rig and what does Rich do? Stirs up the weather so bad that a tropical storm is now in the Gulf HAHAHA

I'm sure they are tired. I'm off to rest up - next week is gonna be a bear!

it's my chance...

You know when you get married and you gaze into the future and see you and your spouse reaching your dreams. I'm having that moment.

A marriage is hard to describe. It's full of emotion. Ups and downs and struggles and successes. I always believed you should support each other to obtain your dreams and goals. Shouldn't you be each other's cheering squad and supporting, and that soft place to land?? I cannot tell you how many times my husband has been there for me. To vacationing with the "girls" to holding me when I cry and demand to know the why's about what is afficting me at that moment. He's always been there.

Now it's my turn. When I heard how happy he was tonight.. I was so happy FOR him. I cannot wait until the gets back so he can share his trip with me. I tried not to ask too many questions LOL I want to give him something to tell me when he gets home.

When we dated, he had an uncle who he just looked up to so much. His uncle is what is called a "mud man". He goes on drilling rigs and tests the mud and knowns how much of what chemical to add to get the drilling done. My hubby had a strong desire to go into the oil field. But being a soon-to-be husband and wanting kids right away he put that on hold. I watched his uncle and aunt divorce. The strain of him being away for days on end was too much. We often talked about how glad we were that he didn't go into that field afterall.

Fast forward 20 years! My husband is at the end of the Earth (actually, Louisiana) and then he's 100 miles out in the Gulf, on a rig. He's not a mud man, but he's doing something very similar. He's enjoying every minute of his trip and I'm sure he's just glowing! He talked about watching the sun set in the Gulf.. the wind and the rain, the food, the men, the rig, the boat to get there... I have never heard him talk so much LOL I'm so happy for him.

I don't like him being gone. I"m selfish. I want him home with us. But I'm glad he's having this experience. It shouldn't happen to often for him to go out on a rig, or this far away.. so I can deal with it for a few days. I'm just so happy he's finally getting to see what it's all about :)

And I cannot wait for him to get back! He's called twice from the rig to tell me all is okay and it just melts my heart that he loves us so much he doesn't want us to worry about him. We are suture use to talking several times a day on the cell, so I know he's lonesome too.
