Menu Monday

Monday - I have bonco - the family is eating leftover burgers and salads and mac n cheese. (we tend to eat our burgers without buns, so salad on the side instead of ON the burger.)

Tuesday - Baked chicken, carrots, potatoes, rice and gravy.

Wednesday - Fajitas with the timmings.

Thursday - chicken pot pie using up leftover chicken.

Friday - Cheeseburger pie or homemade pizzza - depends on who is home :)

How do you make your baked chicken?

Baked chicken: Wash chicken and pat dry. Rub with your favorite seasonings. Sometimes I inject the bird with seasonings. Place chicken in an iron pot or roaster. Add a can of chicken broth. Toss in some carrots, onions, potatoes, celery. Sometimes I put veggies in the cavity. Bake in oven at 375 degrees for about an hour - I check with a meat thermometer. Sometimes I have to add more broth.

When it's cooked, I take the bird and veggies out and put them on a platter. I thicken the gravy with a bit of flour or cornstarch. Add veggies back to gravy and put back in oven to thicken while I'm cutting up chicken and last minute things.

Sorry if it's hard to understand. Most of the time I just do whatever I"m in the mood for. If you have a question, please feel free to ask!

If you want the whole thing in a gravy, I brown the chicken pieces on the stovetop in the pot with oil. Once browned to my liking, I add the broth and veggies...simmer until done.

Crunchy skin = oven.

Just depends on my mood and time. :)

Oooh, you put chicken broth with yours. I bet that keeps it nice and moist I'll have to try it.
